Double Layered Apple, Turkey and Baby Kale Quesadilla

Serves 4 | 

This simple recipe makes for a fantastic quick snack.



Ingredients:

1/2 apple, (thinly sliced)
1/2 cup Mozzarella cheese, (shredded)
1 cup kale
3 flour tortillas, (fajita size)
1/2 cup turkey, (roasted, chopped)

Directions:

  1. Warm a large pan on medium-low heat. Once warmed, place one tortilla in the pan. Flip after 2-4 minutes, the tortilla should be lightly browned. Remove and set aside.
  2. Separate the remaining ingredients in half. Place second tortilla in warm pan and sprinkle with cheese, apple slices, kale and turkey.
  3. Place the precooked tortilla on top and sprinkle the remaining ingredients on top of that.
  4. Place third tortilla on top. Once the bottom section is melted, carefully flip to warm opposite side, holding the edges together to keep filling in place.
  5. Cook the tortilla until the ingredients are melted in place. Both halves should be lightly browned and a little crispy.
